 Preparation.
 stage 
1. Heat a kadai and put scraped coconut to it and stir it well continuously in low  flame. 

2. dry roast the dried red chillies in medium flame until the chillies become crisp. 
 
3. To the kadai now add urad dal and roast it until it turns a reddish-brown colour. stage     Let all the fried items cool to room temperature. Make sure the fried items don’t catch moisture. In a mixer jar take all the dry roast items, add tamarind and salt. Powder it well.

Chammanthippodi is ready.

Cook together sliced mangoes, turmeric powder, chilli powder, green chilli and salt with with 2 cups water. Bring it to boil and let it simmer, till the mangoes are cooked and reaches a mushy consistency.

Grind together coconut and cumin with 2-3 tbsp water to a smooth paste.

Add ground coconut paste to cooked mangoes and mix well. Let it cook for 5-7 mins on low - medium flame.

Remove the pan from the fire (to avoid splitting / curdling) and gradually add yogurt / buttermilk. Gently mix till no white traces are seen.

Bring it back to fire and cook on low flame for 5-6 mins, till steam comes from the back of the spoon. Do a taste test and add more salt, sugar (if required).

Heat oil in a small pan and crackle mustard seeds. Add curry leaves & dried red chilli. Fry for 1-2 mins and add to the curry.

Let the curry rest for 10-15 minutes before serving.

 Ingredients (To serve Two)

Watermelon – 1/2
Salt – 1/8 Teaspoon

Sugar – 3 Tablespoons (or as necessary)

Green chilli – half of a long chilli (Max 1/2 inch long)

Ice cubes – 1 cups

Method of Preparation

In a blender add salt, sugar, ginger and green chilli. Cut half of a watermelon into cubes and add the same to the blender. Blend on high speed until the watermelon is pureed  Add  Ice cubes and blend well for 10 to 15 seconds.   Transfer the watermelon mojito into a serving glass.

1/4 cup - Grated coconut   
  2 tbsp - Desiccated coconut.                              How to Make Tapioca Sweet Balls                              Remove the skin of the tapioca until the white layer appears. Add salt and cook it well in a pressure cooker.Mash them well or grate them.Add sugar, grated coconut .Take a small quantity of the mashed tapioca, make small balls, and roll these balls in the desiccated coconut to evenly coat them.

Coconut Kheer is  on menu today. I am telling you, it is one of the most delicious and simple kheer you could make...                                made this and took to my home place, my kids loved it so much. he finished the whole thing in few minutes                               
Coconut Water – 1 cup
Tender Coconut Flesh – 1 cup
Sweetened Condensed Milk – 1/2 cup
Milk – 3 cups
Sugar – 1/4 cup to 1/2 cup  Take a bowl and add in a can of coconut water and china grass .Whisk all   well to combine. Bring the mixture to a boil. When it comes to  remove from heat and set aside.                                  
 Take a bowl and add in a can of condensed milk and milk cream. Also add 3 cup of full fat cows milk .Whisk all the ingredients well to combine. Bring the mixture to a boil. When it comes to a mere boil, remove from heat .            Now remove it from heat and add in the  coconut water mix,  tender coconut milk  . Mix well .   Chill before serving.

CHICKEN MAJBOOS

Arabic Chicken Majboos 
Ingredients  
.                           
  1 Kg – Chicken (cut into medium pieces)                       3 Cup – Basumathi  Rice         
  1 tsp –  Ginger Paste             
 1 tsp – Garlic Paste             
    2– Tomatoes (Chopped)     
 6– Green Chilli                     
   1 tispoon   – Arabic Masala
 2 Springs – Curry leaf       
   1 – Onions (Chopped)        
  ½ cup – Tomato Paste        
   1 tsp –  Turmeric Powder   
   1 – Dried Lemon               
    25 g – Ghee or oil           
   Salt as required                 
   25 g – Coriander Leaves (chopped)

To Make Arabic Masala:

1 tbsp – Coriander Seeds½ tsp –  Black Pepper Powder5 – Cardamom Seeds5 – Cloves1 tsp – Cumin1 inch – Cinnamon Stick½ – Nutmeg1- Bay Leaves

Preparation

Step1

Heat a pan and dry roast all ingredients. Let it cool and make a nice powder. Keep it in air tight container.
 

Step2

Marinate the chicken with salt, turmeric powder and Arabic masala.

 

Step3

Heat Ghee or oil and fry chicken till it becomes brown in color. Remove it from the pan.

 

Step4

In a pan add onions and stir till it becomes light brown.Add garlic paste, ginger paste and green chillies. Sauté it on low flame for 3 mins, add tomatoes, tomato paste, curry leaves and half of coriander and continue to stir it.

 

Step5

Add a little hot water and salt. Add the fried chicken and let it cook in the gravy for 5 mins. After 5 mins remove the chicken pieces from the gravy and keep it aside.

 

Step6

Add another litre of water and boil the rice in it. Cook on low flame until the liquid is absorbed. Now spread ghee on top of the rice and put the chicken on top.
 

Step7

Garnish with coriander leaves and cook for 20 mins on low flame. Put dried lemons on top and sprinkle some lemon juice on top of it and serve it

Ingredients

15 Red Hibiscus flowers2 cups of Water3 tbsp Sugar2 tbsp Lemon juiceIce cubes

Instructions

Remove thread like part in the center of the flower holding the yellow pollen of each flower.

Wash and separate the petals of the flower.

Bring the water to a boil in a sauce pan.

Add the petals to the boiling water. Cook until the petals turn white.

Remove from heat. Strain the petals. Let it cool. (You can store this syrup in the refrigerator for long use).

Add sugar and lemon juice. Stir well to combine.

Add ice cubes and serve. Enjoy the chilled refreshing drink

Ingredients 
Water 250 ml
Sugar - 100 gm
Cardamom powder - 1/2 teaspoon 
Bread slices (without edges) - 5
Milk - 50 ml
Refined oil - 500 ml

Preparation 

In a kadhai add water and sugar. Bring to a boil and add cardamom powder. Stir well. Keep on medium heat for 8-10 minutes. Keep the sugar syrup/chaashni aside. 

In a bowl mash bread slices adding milk in parts to create a dough like consistency. Roll the dough into small dumplings . Deep fry these in oil till they turn brown. Dip the fried gulab jamuns in the warm syrup. Serve with the syrup.
